Bottles We’re Excited About 

Every month, a handful of bottles naturally rise to the top behind the bar. These are the whiskies that spark conversation, prompt second pours, and tend to get pulled from the cabinet more often than expected. They are not chosen based on hype alone. They earn their place through balance, character, and the simple fact that they deliver something memorable in the glass.

Some of the bottles we feature are limited releases that will not be around for long. They might come from a single cask, a short production run, or a one time experiment that captures a distillery at a specific moment. When these arrive, we like to take our time with them, share them thoughtfully, and talk about what makes them distinct before they disappear.

Others are quiet classics. These are whiskies that may not dominate headlines but consistently overdeliver. They are well made, dependable, and often surprising, especially for guests tasting them for the first time. These bottles remind us that great whisky does not always need to be rare or expensive to be worth your attention.

Then there are the whiskies we simply cannot stop talking about once they are open. Maybe it is an unexpected flavour note, an unusually long finish, or the way the whisky evolves with a little time in the glass. These are the bottles that get passed across the bar with a suggestion to slow down and take another sip.
